David Caronia, owner/operator of L’unico coffee lives and breathes coffee, it is everything to him.
Having been in the industry for 18 years, working his way up from the bottom in the warehouses, then progressing to roasting and coffee machine repairs, David knows his coffee inside out, something verified by the industry itself as L’unico won a Silver and three Bronze medals at the Australian International Coffee Awards in 2016.
This dynamic and edgy roastery based in Ferntree Gully is quickly making a big name for itself, unsurprisingly given the amazing quality coffee it produces, along with exceptional service. Led Zepplin or Creedance cranks as David roasts on the weekends in his laboratory-esque coffee studio. His coffee is infused by his energy and enthusiasm.
David has worked in large scale roasteries, as well as boutique coffee environments, learning valuable lessons that have inevitably led him to create L’unico, where he can provide individual coffee to local clientele, and provide a personalized service unmatched by others in this very competitive industry.
Before L’unico, David was purchasing for large commercial roasters, with infinite amounts of coffee at his disposal to taste and perfect his skills in roasting and blending. Understanding the origin of each individual bean, how it’s been grown, treated, harvested, the weather when it was grown and so on, all come into play when working with the coffee, and pairing it with others to create unique, delicious combinations. A main benefit of being boutique in size as L’unico is, is the freedom to do short run blends and individualize coffee’s for specific purposes, without having to create huge quantities.
